Speaker/Presentation:Meadmaking by Roger Gibson

·Early in the season - bees are getting pure locust honey

·Late in the season - there often isn't enough of a pure crop, so you frequently get mixed honeys/blends

·The type of honey made depends on where beekeepers keep their hives - can keep in an orchard to get the varietal honey

·Sugars

    • Some honeys have more maltose (tupelo, buckwheat), giving honey more complex flavors.
    • Lower dextrose = a bit more fructose (tupelo) which keeps honey from crystalizing

·pH - different honeys have different pH, ash, nitrogen

·Note that orange blossom honey can often be from various citrus fruits, not just oranges

·Roger's handout has some websites on honey. Check shipping charges on the websites.

·Roger brought in different honeys for people to taste. Here are some comments on the different honeys:

oClover - grassy, straw, earthy, lightly floral

oAlfalfa - stronger than clover, not as sweet as clover, tart, creamier, mild

oOrange blossom - can't taste orange, a little bitterness at the end, light floral character. Has higher acid content, ideal for making a mead

oTupelo - fennel, mint, spicy, vanilla, licorice/anise, woody

oWildflower - toasted marshmallow, caramel, floral, vanilla

oBuckwheat - malt extract, molasses, sorghum, low sweetness, pungent, earthy, spicy, robust

·Comments on different varietals (not tasted at meeting but generally available online)

oBamboo - people say it's like a mild buckwheat

oBlueberry - makes a mead that tastes like blueberries

oGoldenrod - medium-amber color

oMesquite - makes good mead

oEucalyptus - full-bodied, aromatic, herbal, minty

oLocust - very light, almost white, good for dry meads, similar to riesling or sauv blanc. Hard to find.

oWhite sage - floral, herbal, light, delicate

oBasswood - light, strong, biting flavor, woody

·Mead #2: caramel apple - mincemeat, caramel, apple, dried fruit, a little alcohol at finish (9 votes)

oWinner: made with Apple juice (1.44, finished 1.28), DME, added acid blend

·Mead #3: hopped mead - rubbery, coconut, minty, not a lot of hops, fruitcake (1 vote)
